Ingredients
  1. 1 tbsp oil
  2. 1 tbsp butter
  3. 250g local Isabela longganisa, casings removed
  4. 1 pc red onion, sliced
  5. 1 pc bell pepper, sliced
  6. 1 pc finger chili, sliced
  7. 1/2 cup mushrooms, sliced
  8. 1 tbsp vinegar
  9. 4 pcs eggs, whisked
  10. 3 tbsp cream
  11. 1 bunch spring onions
  12. salt and pepper to taste
Instructions
  1. In a bowl, combine whisked eggs, cream, salt and pepper and sliced spring onions. Set aside.
  2. In a pan, saute and brown the longanisa in little oil.
  3. Add in the onions, bell peppers, finger chilis and butter.
  4. Add in the musshrooms and a splash of vinegar. Cook for a minute or two then set aside.
  5. In the same pan, cook the egg until cooked through.
  6. Place the egg on a plate, top it with the sauted longanisa and vegetables and fold the egg. garnish with spring onions and serve.
