  1. Melt chocolate in a double broiler by filling a saucepan with water and bringing it to a simmer.
  2. Place a bowl with the chocolate over the water, so the bottom barely comes in contact with the water
  3. Stir chocolate until melted and smooth.
  4. Remove bowl from saucepan, add vanilla and let the mixture cool slightly. Dark rum can be added for extra flavour.
  5. Beat cream with an electric mixer for about 30 seconds or until slightly thickened. Add chocolate to cream and beat together for about 1 minute until soft peaks form.
  6. Spoon the mousse into small dishes or ramekins. Refrigerator for 2 hours.
  7. Our advice: forgo the store-bought chocolate treats on Valentine’s Day. Make something special for your family and loved ones. It will be far more meaningful and with these four other chocolate recipes, more delicious!
