Pork Adobo with Eggs & Potatoes, also known as Adobong Baboy na may itlog at patatas, is a stewed pork in soy sauce and vinegar, other condiments.Pork Adobo is pork cooked in soy sauce, vinegar, and garlic. This is considered by many as the Philippine’s national dish because of its popularity, ease in preparation, and long storage life.
Boiling the pork without vinegar in the beginning of cooking procedure makes the process of pork tenderization faster. Add the vinegar when pork is already tender.Adding 1 tablespoon of oyster sauce will make your pork adobo more delicious.Pork loin or butt is a good substitute if you don’t like pork belly for your adobo.There are different variations in cooking this dish (sometimes called regional versions).
